Ingredients
Scale:
- 2 cups cooked and shredded chicken
- 1/2 cup plain Greek yogurt (or mayonnaise)
- 2 tablespoons curry powder
- 1 tablespoon honey (or agave syrup)
- 1/4 cup chopped green onions
- 1/4 cup raisins or chopped apples (optional)
Instructions
- In a large mixing bowl, combine the cooked and shredded chicken.
- In a separate bowl, whisk together the Greek yogurt, curry powder, and honey until smooth.
- Pour the curry dressing over the shredded chicken and mix gently.
- Add in the chopped green onions and raisins or apples, and stir to combine.
- Cover the bowl and refrigerate for at least 30 minutes before serving.
- Serve chilled on a bed of greens, in a sandwich, or in lettuce wraps.
