8 ounces elbow macaroni
1 cup celery, finely chopped
1 cup bell pepper, diced
1/2 cup red onion, finely chopped
1/2 cup sweet pickle relish
1/2 cup green onions, chopped
1 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 tablespoon sugar
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1/4 cup parsley, chopped
Instructions
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, usually about 7-8 minutes.
Once cooked, drain the pasta in a colander and rinse under cold water until completely cool.
In a mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, sugar, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until smooth and creamy.
