1 can (14 oz) coconut milk
1 cup chicken broth
1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
1 red bell pepper, sliced
1 cup green beans, trimmed
1 medium onion, sliced
2 cloves garlic, minced
1 tablespoon fresh ginger, minced

Instructions
In a large skillet or wok, heat 1 tablespoon of oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1 minute.

Add the chicken pieces to the skillet, cooking until they begin to brown on all sides, about 5 minutes.
