4 medium zucchinis
1 pound Italian sausage
1 cup diced bell peppers (red and green)
1 cup diced onion
2 cloves garlic, minced
1 cup marinara sauce
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil or parsley for garnish
Instructions
Preheat your oven to 375°F (190°C).
Wash the zucchinis and cut them in half lengthwise. Scoop out the seeds and some flesh to create deep boats.
In a skillet over medium heat, cook the Italian sausage until browned, breaking it apart.
Add diced bell peppers and onions to the skillet, sauté for 3-4 minutes until softened.
Stir in minced garlic and cook for an additional minute until fragrant.
Pour in marinara sauce, Italian seasoning, and season with salt and pepper. Let it simmer for about 5 minutes.
Spoon the sausage mixture into the zucchini boats, filling them generously.
Top each boat with shredded mozzarella and Parmesan cheese.
Bake for 25-30 minutes until zucchini is tender and cheese is melted and bubbly.
