Salmon Crispy Rice is a delightful dish that combines the rich flavors of salmon with the satisfying crunch of crispy rice. This recipe is perfect for those looking to create an impressive appetizer or a quick lunch, showcasing the wonderful textures and tastes of Japanese cuisine.
Ingredients
Scale:
1 cup sushi rice
1 ¼ cups water
2 tablespoons rice vinegar
1 tablespoon sugar
½ teaspoon salt
Vegetable oil (for frying; use enough to fill the pan about ½ inch deep)
1 cup cooked sushi rice (prepared from above, ensuring it's cooled to room temperature)
4 ounces smoked salmon, thinly sliced
1 avocado, sliced
2 green onions, finely chopped
1 tablespoon sesame seeds (optional, for garnish)
Fresh herbs (like cilantro or chives, for garnish)
Instructions
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a medium saucepan and bring to a boil over medium heat, stirring gently to ensure even cooking. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes or until the water is fully absorbed. Remove from heat and let it sit covered for 10 minutes.
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved completely. Stir this mixture gently into the warm rice. Let the rice cool to room temperature.
Transfer the cooled sushi rice to a square or rectangular baking dish lined with parchment paper. Spread the rice evenly and compact it down firmly. Refrigerate for at least 30 minutes.
In a large pan, heat vegetable oil over medium-high heat. Cut the chilled rice into squares or rectangles, about 2 inches in size. Carefully place the rice pieces in the hot oil and fry until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.
Top each piece of crispy rice with a slice of smoked salmon, a slice of avocado, and sprinkle with chopped green onions. Add sesame seeds if desired, and garnish with fresh herbs.
