1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 cup unsalted butter, softened
1 ½ cups granulated sugar
1 large egg
1 teaspoon pure vanilla extract
½ cup red sprinkles
½ cup blue sprinkles
Instructions
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper for easy cleanup and to prevent the cookies from sticking.
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.
Add the egg and vanilla extract to the butter mixture, beating until well combined.
Gradually mix in the dry ingredients, starting with a low speed to prevent the flour from flying out.
Gently fold in the red and blue sprinkles, reserving some for topping.
Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Sprinkle the reserved red and blue sprinkles on top of each cookie ball.
Bake in the preheated oven for 10-12 minutes, or until the edges are just lightly golden.
Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
