Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper for easy cleanup and to prevent the cookies from sticking.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture, beating until well combined.
  5. Gradually mix in the dry ingredients, starting with a low speed to prevent the flour from flying out.
  6. Gently fold in the red and blue sprinkles, reserving some for topping.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Sprinkle the reserved red and blue sprinkles on top of each cookie ball.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are just lightly golden.
  10. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
