8 oz (225 g) pasta (your choice – spaghetti, fettuccine, or penne)
4 cups fresh spinach, washed and roughly chopped
3 cloves garlic, minced
1 small onion, diced
1 cup vegetable broth
1 cup heavy cream or coconut cream for a dairy-free option
2 tablespoons olive oil or butter
Salt and pepper to taste
Grated Parmesan cheese (optional)
Crushed red pepper flakes (optional)
Instructions
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
In a large skillet over medium heat, add olive oil or butter. Once hot, add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and sauté for another minute.
Gradually add the chopped spinach to the skillet, stirring continuously until wilted, about 2-3 minutes.
Pour in the vegetable broth and bring to a simmer. Cook for 2-3 minutes, then reduce the heat to low and stir in the heavy cream or coconut cream. Season with salt and pepper to taste.
Add the drained pasta to the skillet with the spinach sauce. Toss to combine, adding reserved pasta water as needed to achieve the desired consistency.
Remove from heat and serve hot. Top with grated Parmesan cheese and crushed red pepper flakes if desired.
