A quick and easy dinner recipe combining ground beef, fresh zucchini, and creamy cheese for a satisfying meal perfect for busy weeknights.

1 pound ground beef (preferably lean)
2 medium zucchinis, sliced into half-moons
1 cup shredded mozzarella cheese
1/2 cup diced onion
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
1/4 cup chopped fresh parsley (optional)
Grated Parmesan cheese for serving (optional)
Instructions
Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3 minutes.
Add the minced garlic to the skillet and cook for another minute.
Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
Stir in the Italian seasoning, red pepper flakes, salt, and pepper. Mix well to combine the flavors.
Incorporate the sliced zucchini and drained diced tomatoes into the skillet. Stir everything together and let it cook until the zucchini is tender, about 5-7 minutes.
Reduce the heat to low and sprinkle the shredded mozzarella cheese evenly over the mixture in the skillet. Cover and allow the cheese to melt, approximately 3-4 minutes.
Once the cheese has melted, remove the skillet from heat. Garnish with chopped fresh parsley and grated Parmesan cheese if desired before serving.
