1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
2 cups heavy whipping cream
1 cup cream cheese, softened
¾ cup powdered sugar
1 tsp vanilla extract
1 cup fresh strawberries, pureed
1 cup fresh blueberries, pureed
Whipped cream for topping
Fresh berries for garnish (strawberries and blueberries)
Instructions
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined, resembling wet sand.
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Refrigerate for about 30 minutes to set.
In a large mixing bowl, whip the heavy cream until stiff peaks form. In another bowl, beat the softened cream cheese until smooth, then add the powdered sugar and vanilla extract. Mix until combined and creamy.
Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
Take the pureed strawberries and blueberries. In the prepared filling, drop spoonfuls of the fruit purees and gently swirl.
Pour the creamy fruit mixture into the chilled crust, smoothing the top with a spatula. Refrigerate for at least 4 hours, or overnight, to allow it to set properly.
Once set, remove the pie from the refrigerator. Top with whipped cream and additional fresh berries. Slice and serve chilled.
