4 medium-sized zucchinis, sliced into 1/2-inch thick rounds
1/2 cup unsalted butter, melted
4 cloves garlic, minced
1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
1 teaspoon salt
1/2 teaspoon black pepper
Wooden or metal skewers
Instructions
Prepare the skewers by soaking wooden skewers in water for at least 30 minutes to prevent burning during grilling.
In a mixing bowl, combine the melted butter, minced garlic, chopped parsley, salt, and black pepper. Whisk until well blended.
Add the sliced zucchini to the bowl and gently toss to coat each piece evenly with the garlic butter mixture.
Thread the zucchini slices onto the soaked wooden skewers or metal skewers, leaving a little space between each piece.
Preheat your grill to medium-high heat (about 375°F to 400°F).
Once the grill is ready, place the zucchini skewers on the grill. Cook for 10-12 minutes, turning occasionally.
Remove the skewers from the grill and brush with any remaining garlic butter for extra flavor.
