Ingredients

- 4 medium zucchinis, spiralized into noodles
- 4 tablespoons unsalted butter
- 1 medium lemon, juiced and zested
- 2 cloves garlic, minced
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Start by spiralizing the zucchinis using a spiralizer. Set aside in a large bowl.
- In a medium saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1 minute.
- Stir in lemon juice and zest into the melted butter mixture. Season with salt and black pepper. Simmer for 2 minutes.
- In a large skillet, heat the spiralized zucchini noodles over medium heat. Sauté for 2-3 minutes until slightly tender.
- Pour the lemon butter sauce over the sautéed zucchini noodles and toss to coat. Cook for an additional minute.
- Serve hot, topped with grated Parmesan cheese, chopped parsley, and red pepper flakes if desired.
