12 oz (340 g) of your favorite pasta (penne or fettuccine)
2 tablespoons of olive oil
4 cloves of garlic, minced
1 can (15 oz) of crushed tomatoes
½ teaspoon of red pepper flakes (optional)
1 teaspoon of dried basil
1 teaspoon of dried oregano
Salt and pepper to taste
½ cup (120 ml) of heavy cream or coconut milk
¼ cup of grated Parmesan cheese or nutritional yeast for a vegan option
Fresh basil leaves for garnish
Instructions
In a large pot of boiling salted water, add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain the pasta, reserving 1 cup of the pasta water.
In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
Pour in the crushed tomatoes, add the red pepper flakes, dried basil, oregano, salt, and pepper. Stir and let simmer for about 5-7 minutes.
Reduce the heat to low and slowly stir in the heavy cream or coconut milk. Mix well and adjust the consistency with reserved pasta water if needed.
Add the drained pasta to the sauce and toss to combine thoroughly, cooking for an additional 2-3 minutes.
Plate the pasta and sprinkle with grated Parmesan cheese and fresh basil leaves for garnish. Serve immediately.
