1 medium head of green cabbage, chopped into bite-sized pieces
2 medium potatoes, diced into 1-inch cubes
1 large onion, chopped
3 cloves garlic, minced
2 carrots, sliced thinly
1 cup celery, diced
6 cups vegetable broth (or chicken broth)
1 cup heavy cream (or coconut cream)
1 teaspoon dried thyme
1 teaspoon paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (optional, for garnish)
Instructions
In a large pot or Dutch oven, heat a splash of oil over medium heat, add the chopped onion and sauté for about 5 minutes until translucent.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the chopped cabbage, diced potatoes, sliced carrots, and diced celery to the pot. Sauté for another 5-7 minutes until the vegetables begin to soften.
Pour in the vegetable broth and season with thyme, paprika, salt, and pepper. Bring to a boil.
Once boiling, reduce the heat to low, cover the pot, and let it simmer for 25-30 minutes until the vegetables are tender.
Using an immersion blender, blend the soup until smooth and creamy.
Return the blended soup to the pot, stir in the heavy cream, and heat through for about 5 minutes.
