Ingredients
Scale:
1 cup fresh mozzarella cheese, diced
1 cup ripe tomatoes, diced
1/2 cup fresh basil leaves, chopped
1 tablespoon balsamic glaze
Salt and pepper to taste
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, combine the diced mozzarella cheese, diced tomatoes, chopped basil, and balsamic glaze. Season with salt and pepper to taste. Mix well and set aside.
Take the chicken breasts and place them on a cutting board. Using a sharp knife, carefully cut a pocket into each chicken breast, about 2-3 inches deep.
Generously fill each chicken breast pocket with the Caprese mixture. Use toothpicks to secure the openings if needed.
In a large oven-safe skillet, heat the olive oil over medium-high heat. Season the st■ chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
Carefully place the st■ chicken breasts in the skillet and sear for about 4-5 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
Remove the skillet from the oven and let the chicken rest for about 5 minutes before serving.
