A refreshing and crunchy dish that combines the vibrant, nutritious qualities of raw broccoli with a variety of flavorful ingredients.
Ingredients
Scale:
4 cups fresh broccoli florets
1 cup cherry tomatoes, halved
1/2 cup red onion, finely chopped
1/2 cup shredded carrots
1/2 cup raisins or dried cranberries
1/2 cup cooked and crumbled bacon (optional)
1/2 cup sunflower seeds or chopped nuts
1/2 cup mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons honey or maple syrup
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
Begin by preparing the broccoli. Wash the florets under cold water, then chop them into bite-sized pieces. Ensure they are thoroughly dried.
In a large mixing bowl, combine the broccoli, cherry tomatoes, chopped red onion, shredded carrots, raisins or dried cranberries, bacon (if using), and sunflower seeds. Stir gently to mix.
In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey (or maple syrup), and Dijon mustard until smooth.
Pour the dressing over the broccoli mixture and toss gently until all ingredients are well coated.
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
Before serving, give the salad a final toss and adjust seasoning if necessary. Serve chilled or at room temperature.
