Ingredients

4 cups fresh arugula, washed and dried
1 cup blackberries, rinsed and drained
1 ripe avocado, diced
1/4 cup crumbled feta cheese (optional)
1/4 cup walnuts or pecans, roughly chopped
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey or agave syrup (to taste)
Salt and pepper, to taste
Zest of 1 lemon
Juice of 1/2 lemon
Instructions
Wash the arugula thoroughly and dry it using a salad spinner or a clean kitchen towel.
Carefully cut the avocado in half, remove the pit, and scoop the flesh out using a spoon. Cut it into bite-sized pieces and set aside.
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, lemon zest, lemon juice, salt, and pepper.
In a large mixing bowl, add the arugula, blackberries, diced avocado, and nuts. If using, sprinkle the crumbled feta on top. Gently fold to combine.
Pour the dressing over the salad and toss gently to combine.
Transfer the salad to a serving bowl or plate and garnish with extra nuts or feta if desired.
