Beef Bean Enchilada Casserole

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, stirring frequently. Drain excess fat if necessary.
  3. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  4. Stir in cumin, chili powder, salt, and pepper. Mix thoroughly for about 1 minute.
  5. Add the black beans and half of the enchilada sauce to the beef mixture. Stir until combined and heated through, about 2-3 minutes.
  6. In a 9x13 inch baking dish, spread a thin layer of the remaining enchilada sauce on the bottom. Place 2-3 tortillas on top. Spoon half of the beef and bean mixture over the tortillas, then sprinkle with 1 cup of cheese.
  7. Repeat the layering process with the remaining tortillas, beef mixture, and cheese. Finish with a layer of tortillas topped with the last of the enchilada sauce and remaining cheese.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes.
  9. Allow the casserole to cool for about 10 minutes before slicing. Garnish with cilantro, sour cream, and jalapeños if desired.
