  1. In a large bowl, combine the chicken cubes, BBQ sauce, olive oil, garlic powder, smoked paprika, salt, and pepper. Mix well to coat the chicken evenly. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  2. Preheat your grill to medium-high heat (about 400°F or 200°C). If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  3. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  4. Grill the chicken skewers for about 10 to 12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  5. While the chicken is grilling, prepare the salad. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and bell peppers. Toss gently.
