  1. In a large mixing bowl, combine the masa harina, baking powder, and salt. Mix thoroughly to ensure even distribution of dry ingredients.
  2. Gradually add 1 cup of warm water to the dry mixture, mixing with your hands or a spoon until a dough begins to form. If the dough feels dry, add more water, a tablespoon at a time.
  3. If using, add the vegetable oil to the dough and knead gently for a couple of minutes until smooth. Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
  4. Divide the dough into 8-10 equal portions, roll each portion into a ball, and flatten them into disks, about ½ inch thick.
  5. Preheat a griddle or non-stick skillet over medium heat. Once hot, place the gorditas on the griddle and cook for 3-4 minutes on each side.
  6. Once cooked, transfer the gorditas to a towel-lined basket to keep warm while you cook the remaining dough.
  7. If desired, fill each gordita with your choice of refried beans, cheese, meat, or sautéed vegetables. Serve warm.
